Calcium Carbonate

Lowers acidity in wine.
The addition of 5/8 teaspoon per gallon will lower acidity .15%.
Use before fermentation. 

Use sparingly to avoid a chalky taste.
Do not reduce acid more than .30% by the use of this additive.
