Great for cloning Schnider Aventinus, Weihenstephaner Vitus, Erdinger Pikantus and Paulaner hefeweissen.
Strong fermentation with moderate floculation.
I use it mostly for my 5gls (6gls at primary ) weizenbock recipes 2 VIALS (+starter ) for OG 20 Plato and FG 5 Plato two weeks at 68-72F and three day at 40F the keg at 30Psi for 5 days then 12 psi for tapping.
In a hefeweissen : same pitch rate but fermentation at 62-64F OG18 and FG 6 same conditioning scheduled.
Recipes modified with Beer Smith for higher ABV from Brewing Classic Styles.
Starter made with light DME 10 Plato 1 liter
Use blow off hose to avoid spills and bucket sprayers
CONS : after harvest use it in two weeks, if not ferment stuck do not storage more then two weeks to keep viability.
