Brewed mainly in eastern Canada, especially in Quebec, Canadian Ale exhibits a rich golden hue. It is lightly hopped, creating a very gentle character that doesn’t mask the malty sweetness. This recipe produces a much more traditional and flavorful beer than Canadian exports. It is light in flavor and light to medium-bodied in character. Remaining faithful to the style, it is highly carbonated with low to medium head retention. One should be able to sense a slightly floral aroma, accompanied by a hint of malt.

This is a great beer on its own. Smooth, not too heavy, not too hoppy. But where it really shines is that when you add a fruit extract, it's even better! I make a batch with apricot every year, and last year also did a strawberry that turned out really well.
It's also a pretty nice beer to brew. Not too many steps to keep track of or long boil times.
