Our 90 Minute Double Pale Ale was and is so popular that we came up a version that employed the use of two of the most popular hops in the marketplace at this time - Amarillo & Simcoe.
The Gemini makes use of generous quantities of hops to create a complex beer with intense flavors and aromatics without becoming overly bitter or harsh. Use of only two hop varieties throughout the boil showcases the distinct qualities of both hops and allows a small amount of malt sweetness to show through. It is hop every 10 minutes for 90 minutes.
When kegged, this beer is ready for drinking immediately after carbonating.
Notice the different bittering level based on a partial boil (124 IBU's) and a full boil (180 IBU's).
In the style of: Dogfish 90 Minute Imperial Pale Ale Caution: Extremely vigorous fermentation. Straining, use of large fermenter (at least 7.8 gallons), use of blow-off method and bagged fermenter are highly encouraged unless you use Fermcap S to eliminate the fermentation cap formation.
