Brewzyme-D from White Labs is a powerful amyloglucosidase (AMG) enzyme designed to break down complex starches and dextrins into fermentable sugars. Brewers use it primarily for drying out beers like Brut IPAs, low-carb beers, or high-alcohol fermentations, where complete starch conversion is desired for maximum attenuation. It can also help in distillation mashes to improve fermentable sugar yield.
How to Use Brewzyme-D
Add 0.08–0.125 mL per pound of grain (or 1–4 mL per 5-gallon batch) at mashing temperatures (140–158°F) for saccharification or directly into the fermenter if extended enzyme activity is needed. Be mindful that adding it in fermentation will continue breaking down dextrins, potentially leading to lower final gravity than expected.
